MEATLESS MONDAY

Harmony Valley was recently in touch with the fabulous folks over at Meatless Monday in NYC. We decided to bring you a meatless idea every Monday to support our planet and our bodies. So though it is close to the weekend and you don't want to think about Monday already, here is a great recipe for going meatless this Monday.

CHEESY, CHEESY, CHEESY PIZZA (AKA 3 CHEESE PIZZA)

What you need:

  • 1 Pizza Crust (you can make it but we bought ours in the Whole Foods Market prepared foods section)
  • Pasta sauce (we bought ours at Wholes Foods Market - seeing a pattern?)
  • A block of Gruyere cheese
  • Half bag of organic mozzerella
  • 1/4 cup of Monterey Jack cheese
  • 1 bag Harmony Valley Hamburger Mix (hydrated and add a bit of fennel and red pepper to make a yummy Italian Sausage flavor. Cook until browned.) You may not need to use all of the HV.
    Or storage container for up to a week.

What to do:

Preheat oven to 350 and bake for 35-45 minutes - Roll out the crust and brush with olive oil

  • Cut Gruyere into small chunks

  • On a greased, round pizza pan or a cookie sheet (it won't be as pretty, lay out the dough

  • Lay out cooked Harmony Valley Mix

  • Spoon several tablespoons of pasta sauce (as much or as little as you like)

  • Add all cheeses evenly over the pizza

Bake for 35-45 minutes. Let stand for 10 minutes to cool (though I eat it piping hot) and enjoy!

Stuffed Zucchini: A flexitarian's delight

My husband and I are trying to be a lot healthier than we used to be. He was born and raised on his family's farm and loves meat....however has a new love too, Harmony Valley. We have been making HV a few times a week- on it's own and mixing it with other meats. HV mixed with meat is a great compromise for us because we get to cut our fat in half! I'm happy and he's happy. Now that's harmony.

We have so much great produce right now, especially zucchini and squash. When we brought a huge, round zucchini home from the farmer's market, we decided to take it to Italy with our favorite ingredients.

  • ½ lb Chorizo
  • 1 lb. Harmony Valley Hamburger
  • Shredded Gruyere
  • Shredded Parmesan
  • 1 yellow onion
  • 3 garlic cloves
  • 1 can no salt diced tomatoes
  • ½ jar of spaghetti sauce
  • Garlic salt

Directions:

  1. Hydrate Harmony Valley and let sit for 15 minutes
  2. Cut zucchini in half and remove seeds
  3. Saute onion and garlic in olive oil
  4. Combine meat and half of Harmony Valley add to skillet and brown
  5. Add in diced tomatoes and spaghetti sauce
  6. Garlic salt to taste
  7. Stir Gruyere into mix
  8. Scoop and pile mix into hollow zucchini and top with Parmesan cheese

This dish goes great with brown or white rice.

Surprisingly Simple Quiche

Today we have for you a simple, yet underestimated breakfast sensation. A Harmony Valley Quiche! Quiche can be a smidge overwhelming at times. I think for me, it¹s the crust that seems like a lot of work, especially in the morning. Solution......crust less quiche. We made the quiche on a whim to provide a simple recipe for our Harmony Valley Breakfast Sausage. This fresh and light crustless quiche wows the taste buds without breaking a sweat.

We used fresh broccoli, and red peppers in our quiche but really any veggies on hand will be just as delicious

Summer Veggie Lasagna

We made an amazing lasagna last night with our crop share from Boyles Family Farm. The way we cook is pretty loosy-goosy so if you need more structure just email info@harmonyvalleyfoods.com and I can help break it down for you.

This lasagna is easy and super delish.

Preheat your oven to 375:

  1. Lasagna noodles of your choice
  2. Sauce of your choice: at home, we always doctor up our favorite sauce with onions, garlic and fresh tomatoes for a quick and easy solution. Add one bag of hydrated Harmony Valley Hamburger Mix (follow directions on the bag) to sauce and heat.
  3. Any greens you have on hand. We used spinach, kale and chard
  4. Finely chopped carrots
  5. Finely chopped garlic
  6. 12 oz. of ricotta
  7. 1 egg
  8. 1 pound or as much as you like of mozzerlla
  9. 8 oz of parmesan
  10. Olive oil for sauteing

Prep:

  1. Saute the garlic and carrots in olive on high heat for 2 minutes then reduce heat for another 2 minutes.
  2. On low heat add in washed greens and cover for 10 minutes. Greens will wilt quickly.
  3. Pour mixture into strainer and let sit until ready to add to dish. Make sure all liquid has drained before adding.
  4. Mix egg with ricotta
  5. In a 8x13 inch pan, scoop a cup of sauce and spread on the bottom of the pan
  6. Take uncooked noodles and spread ricotta mixture and line length wise on bottom of the pan
  7. Scoop a cup or two of greens mix and spread on top of noodles
  8. Sprinkle a handful of mozzerella and parmesan over top
  9. Scoop another cup of sauce and spread out
  10. Repeat process until an inch from the top, scoop sauce as desired and top with mozzerella and parm
  11. Cover with foil and bake for 45 minutes to 1 hour

You will love this dish!

Great for entertaining, great for families.

Just In Time For the 4th

We wanted to create a savory delight for this years 4th of July festivities. The 4th is known to be jam packed with out-of-doors, out-of-town and sometimes an out of this world event. This year, spice up your red white and blue weekend with a healthy alternative to the regular smorgasbord of not-so-good for you summer meals. Our Firecracker Burger has a brilliant Mediterranean flavor and that great Harmony Valley texture. The little flecks of red pepper give the burger a festive look!
